Wash the mixed berries thoroughly and pat them dry with a paper towel. If using strawberries, remove the stems and slice them into halves or quarters, depending on their size.
In a mixing bowl, combine the mixed berries, honey or maple syrup, lemon juice, and vanilla extract. Toss gently to coat the berries evenly with the sweetener and flavorings.
Allow the berry mixture to sit at room temperature for about 10-15 minutes to macerate. This process will help release the natural juices of the berries and enhance their flavor.
While the berries are macerating, prepare the granola. You can use store-bought granola or make your own homemade granola if preferred.
To assemble the Berry-Licious bowls, divide the macerated berries into serving bowls.
Top each bowl of berries with a sprinkle of granola for added crunch and texture.
If desired, add a dollop of plain Greek yogurt or dairy-free yogurt alternative on top of the granola.
Garnish the bowls with fresh mint leaves for a pop of color and extra freshness.
